Sweet Potato Fritters

These crispy Sweet Potato Fritters are a new way to enjoy healthy Sweet Potato. One of our regular go to easy recipes for my families weekly meal prep. Which I hope will became popular and loved with your family! Great for quick lunch ideas, add as a simple dinner side dish for an easy night or as the perfect kid-friendly snacks for after school.

Made with shredded sweet potatoes, red onion, cheese, and a dash of paprika for seasoning, the sweet-savory combination of these sweet potato fritters is unforgettable! And is often asked to be made by my son. I feel that it’s a great way to make vegetables more exciting and kids really enjoy them. I either pan-fry the fritters in a thin layer of coconut oil or they are also one of my favourite easy air fryer recipes. I love how they turn out with a crispy exterior and fluffy crumbly middle. We enjoy them for breakfast, lunch, or dinner and serve them with a dollop of mayo or sauce. 

Not only are they quick and easy to throw together, but you also can customize them with various seasonings, toppings, and dipping sauces. They’re the perfect snack too, as well as side dish or a simple go-to lunch. 

Ingredients

  • 3 medium Kumara's
  • 1/2 red onion
  • 2 tsp paprika
  • 1-2 tsp garlic
  • 1/2 cup cheese (chedder, edam or mozzarella are good)  
  • 80g plain flour
  • 2 medium eggs 
  • salt and pepper to taste
  • Coconut oil (for cooking)

  1. Wash and grate the kumaras, spread on a clean tea towel and press dry. Combine all ingredients in a large bowl. 
  2. Heat a fry pan with coconut oil until hot. Gather small size balls of fritter mix. Cook and press balls flat in the pan, cook around 3-4 fritters at a time on medium heat until golden brown on each side. 
  3. Cook 3 minutes per side on medium heat. Serve and enjoy or freeze batch fritters for ready made freezer meals.
  4. Or if your using a Air fryer. Preheat your air fryer to 400°F (200°C)
  5. Line the air fryer basket or tray with Air Fryer Silicone Liners.
  6. Add rounds of the mixture to the air fryer tray and press into a pancake shape with the help of a spatula. Lightly spritz them with spray oil or brush with oil.
  7. Ninja Foodie air fryer allowed me to cook 6 fritters at a time. Depending on your air fryer size and style you may fit more or less. Cook in batches, if needed.
  8. Air fry mode at 400F/200C for 3-4 minutes per side flipping halfway. Once turned, give them one more oil spritz. Fry until the fritter is cooked through and the skin is golden brown and crispy.

Ready in 15-20 minutes.

To Store

Once fritters are cooled, simply pop them into a air tight container (I always used glass food containers Glass Food Prep Containers). Can be stored for up to 3 months. Easy, fast freezer friendly meals, for those days you are short on time or can't be bothered cooking from scratch.

To reheat

To reheat from frozen, either defrost in the fridge overnight. Or simply heat from frozen on a baking tray, lined with unbleached baking paper at 200C fan for 10 mins or until warm.  

Notes

This recipe is super easy to adapt to be flexible for fussy eaters. Change up the spices, use white onions instead of red onions, or even spring onions. 

Serve with

Serve hot kumara fritters with a dollop of your favorite sauce/dips - such as sweet chili, homemade BBQ sauce, garlic aioli, or homemade spicy sauce.

For breakfast serve with poached eggs and smashed avocado, or as a filling with homemade gluten free pitas. 

For dinner stack them up with a side of steamed vegetables.

About us

The reason I started my kids meals blog was as a sharing platform for a easy way to share my recipes with family and friends. My hopes and dreams are for it to evolve into a safe and healthy way for other mummies to get inspiration and knowledge that home cooked foods don't need to be in the too hard basket. I make only easy, quick recipes from everyday ingredients you have in your pantry. I must declare that some of my recipes are in fact more costly than shop bought varieties. However, we eat clean as possible and all our recipes are based on gluten free, dairy free and reduced level refined sugar-free. We stopped buying packaged foods for nearly 10 years, best decision I have ever made!    

A thing I would like to break apart for any Mum. Is that of Mum guilt it is far to incredibly present ,and is far too rooted within societal norms, to be perfect parent. That insane pressure of picture perfect snacks and lunches, hopefully will be lightened here, I am just a mum sharing my many trial and errors of nearly 10 years of epic fails in the kitchen testing 100's of recipes and tweaking them to be healthier ways to feed my family. 

My dreams are that this blog will reach other mummies out there seeking a better way to feed their growing kids. Without all the added nasty ingredients loaded in ultra-processed packet snacks and convenience foods. Which are so cleverly marketed to our kids who end up craving them. Food in my world is home baked from scratch in my kitchen, clean and nutritious as physically possible to get hold of, as where we live living in New Zealand it is a small country with limited suppliers of clean, unprocessed produce. So the only alternative to most ingredients are to ship them in, which on a budget is not an easy or cost effective task for some.    

I hope you enjoy our families favorite homemade recipes we only add recipes we actually eat regularly. I will upload new recipes weekly. We are a family of 3 who seek alternative healthier food than packet food. With emphasis on home made food with love.
