Melt the coconut oil, measure and add all ingredients to a large mixing bowl


Use a spatula to combine well


Empty onto lined cookie sheet baking tray


Use a rolling pin to flatten dough bark


Its your preference how thin you go. Place in the freezer for 10 minutes. Whilst the cookie dough hardens melt the chocolate chips


Pour melted chocolate over chilled dough layer and spread out evenly with a spatula. 


Slice or break into desired portions and enjoy! Store  in the freezer for best results

Ingredients

  • 2 cup almond flour
  • 1/2 cup chocolate chip for base
  • 1/4 cup maple syrup 
  • 1 tsp vanilla essence
  • Pinch of salt
  • 2 Tbsp coconut oil, melted for base

Toppings

  • 3/4 cup chocolate chips, melted for on top
  • 1 tsp coconut oil

Instructions

  1. Measure almond flour add to large bowl.
  2. Add melted coconut oil, vanilla essence, maple syrup, and salt. Stir until well combined and a smooth dough forms. Then gently fold in the chocolate chips.
  3. Line a flat cookie baking sheet with parchment paper/grease proof paper. Press the cookie dough on the sheet. 
  4. Then place another piece of grease proof paper on top and roll flat with a rolling pin. Pop it in the freezer for 10 minutes.
  5. Whilst the bark chills, melt the chocolate chips with 1 tsp coconut oil in a double boiler or microwave for 20 sec bursts, stirring between each, until silky and smooth.
  6. Remove tray from freezer and pour the melted chocolate over chilled dough layer and spread out evenly with a spatula.
  7. Return the bark to the freezer for 30 minutes, or until the chocolate is fully set and hardened.
  8. Break or slice into pieces and enjoy.

Note

Best to store in glass sealed container so every bite is as yummy and fresh as the first. Be warned this chocolate cookie dough bark is addictive, in a good way as a healthy work snack or as a healthy kids snack to pop in their school lunchbox as a treat. 

I used homemade chocolate chips as we don't buy store bought ones. That way we stay well away from emulsifiers like soy lecithin, sugar, and milk fats.

The reason I started my kids meals blog was as a sharing platform for a easy way to share my recipes with family and friends. However, we eat clean as possible and all our recipes are based on gluten free, dairy free and reduced level refined sugar-free. We stopped buying packaged foods for nearly 10 years, best decision I have ever made!    

A thing I would like to break apart for any Mum. Is that of Mum guilt it is far to incredibly present ,and is far too rooted within societal norms, to be perfect parent. That insane pressure of picture perfect snacks and lunches, hopefully will be lightened here, I am just a mum sharing my many trial and errors of nearly 10 years of epic fails in the kitchen testing 100's of recipes and tweaking them to be healthier ways to feed my family. 

My dreams are that this blog will reach other mummies out there seeking a better way to feed their growing kids. Without all the added nasty ingredients loaded in ultra-processed packet snacks and convenience foods. Which are so cleverly marketed to our kids who end up craving them. Food in my world is home baked from scratch in my kitchen, clean and nutritious as physically possible to get hold of, as where we live living in New Zealand it is a small country with limited suppliers of clean, unprocessed produce. So the only alternative to most ingredients are to ship them in, which on a budget is not an easy or cost effective task for some.    

I hope you enjoy our families favorite homemade recipes we only add recipes we actually eat regularly. I will upload new recipes weekly. We are a family of 3 who seek alternative healthier food than packet food. With emphasis on home made food with love.
