Cinnamon scroll pancakes
One-Pan Dish, Moist and Yummy

Servings: 6 big,12 small
Ingredients
- 2 cups milk, we use Lactose free
- 3 tbsp Butter, melted
- 3 Eggs
- 3 tbsp coconut sugar or sugar
- pinch of salt
- 2 tsb Vanilla extract
- 2 1/2 cups self-raising flour
For Cinnamon Swirl
- 3 tbsp Butter, room temperature
- 1 tsp cinnamon
Instructions
- Pre-heat the oven to 180c and line your baking tray
- In a mixing bowl combine all of the pancake ingredients and mix well then set aside
- In a small bowl or cup combine the butter and cinnamon and whisk to combine
- Pour the pancake batter mix into the lined baking tray spreading it to an even thickness
- Add the cinnamon swirl mix to a piping bag and make the swirls as big as you like on top of the pancake batter
- Bake the pancake tray for 15 minutes
- Allow the pancake to cool before cutting into even squares
Note
For the cinnamon swirl. warm the butter until soft not too melted. Add it to a zip-lock bag and snip the tiniest hole. This will help to have more control when swirling the mix.
For a dairy free pancake pan you can replace the milk with your favourite plant based variety and use a suitable alternative to butter for the swirl.
This recipe will also work just as well with plain flour if you aren't gluten free.
